I was happy that Carol could squeeze me into this blog hop when I signed up late.
I’ve shown this recipe before but it’s one I keep getting comments about so I’m showing it again.
It’s NOT a cookie, it’s a cake recipe…..
This is called “Lagkage” in Danish which means layer cake, typically it’s a birthday cake but it can be served any time of year including Christmas!
This cake is BEST if you make it a day or two before the event as it needs time to set in!
Here’s the recipe
Ingredients
Yellow Cake mix (and the oil and eggs to follow the cake mix)
Raspberry Preserves
Vanilla Pudding mix (instant is ok)
Kijafa Cherry Wine- *we found some cherry wine at Aldi later or go with any sweet berry wine.
Whipping cream (for outside of the cake- you may want to add a bit of vanilla or sugar)
Instructions
Bake the yellow cake mix according to the box, I have one tall 9″ round pan but that takes 60 min to bake, but you can bake it any shape you like.
Also make the pudding ahead of time according to box.
After it’s cool, slice into 4 slices- it’s called a 7 layer cake because it’s supposed to be 4 cake layers and 3 layers of STUFF in between.
Take one layer and drizzle generously with the Cherry Wine
Now spread some raspberry preserves all over the layer and then add some vanilla pudding.
Now add another layer of cake and drizzle the wine, spread the preserves, add the pudding and keep going until all layers are done, sprinkle the wine on the top layer.
You can let the cake sit in the fridge for a day or two until you’re ready to eat, then whip up the whipping cream and put on a layer of “crumb coat”
Then go back with a piping bag and add the fun decorations
Have a glass of leftover win and enjoy!

Hi Bea! This cake look yummy. We have always had a Danish layer cake for every birthday, and they look amazingly close to yours. Our town (Racine, Wisc) has a ton of Danish bakeries, so I’ve never made my own. But thank you so much for the recipe and great tips and pictures.
