Bjorn has finished his 2nd week at work, he’s also doing Jujitsu on Monday and Wednesday nights after work and then a game night with friends on Tuesday nights so I pretty much don’t see him until dinner Thursday, unless I wake up early enough before he leaves which has been a struggle with daylight savings!

here at home Super Mario Kart released another WAVE of levels and we have friends in Singapore so we sent them this picture to show that we didn’t need to visit but already drove around in it 😉

Last weekend we had friends over for homemade pizza dinner and they brought these yummy cupcakes!

and we got next year’s curriculums from Sonlight

but not everyone was happy to open the boxes!

once I started unpacking all the books, they both got more interested in them and helped me check off the list and stack everything.

For St. Patrick’s day the girls REALLY wanted me to make green aebelskiver! (Danish pancake puffs) I don’t know when we started this tradition, we’re not at all Irish, but it was just fun to color something green one time for St. Patrick’s day so now it’s sort of tradition!

The pan is a special cast iron pan from Denmark (I think you can get it on Amazon) and the recipe is on allrecipes BUT don’t put oil in the pan, no self respecting DANE puts oil in this pan, it HAS to be little dabs of butter! Butter is BETTER 😉

Let them simmer and brown in the pan, then with a skewer (or a knitting needle! that’s what you’re SUPPOSED to use) you poke at an angle and sort of “grab the cooked edge and flip them over, it’s really very easy, you can do it slowly if you want, the raw batter then seeps into the hole again and continues cooking.

then you get these little pancake balls (puffs) and we ran out of syrup, but jelly and sprinkled powder sugar on top is delicious!
