How come we are already in December? November just FLEW by and I thought I had more time!
Well, I’m not sharing a cookie recipe but a cake recipe and later at “special” cookie….
For my husband’s birthday and for Thanksgiving I made this Danish 7 layer cake!
It’s yummy and EASY to make!!
Ingredients:
A box of yellow cake mix (and oil and eggs for it)
Raspberry preserves, a pretty big jar (my kids love PB and J so whatever is leftover in the jar they’ll quickly eat)
Vanilla Pudding mix (instant or cooking version, doesn’t matter)
A danish Cherry Wine called Kijaffa! (yeah it’s a tricky one, I get it at a specialty wine store)
Whipping cream
I bake the cake in a 8 or 9″ circle pan, I only use one tall pan, so it does take longer to bake (60min or around there)
After the cake is cool, cut it into 4 layers (3 is ok too)
Drizzle with Kijaffa on the layer
Spread Raspberry preserves and then pudding (already made)
then layer another layer of cake, drizzle, raspberry preserves, pudding and keep going and drizzle the last layer with kijaffa.
This cake is BEST if it’s made the day before so the layers can soak up the liquids, so at this point I put it in the fridge plastic wrapped.
The next day, I make the whipped cream (you can add a bit of sugar and vanilla if you want)
I first add a “crumb” coat layer
Then I covered the edges and did swirls around the top. Here I left the middle empty so we could write “Dad” on it and add candles, but for Thanksgiving we covered the whole thing with flower/swirls.
Then have a glass of Kijafa wine with it (it’s super sweet) and enjoy!
Now for the special “cookie”
I machine embroidered and made this cute gingerbread cookie pincushion and will give it away to one of you!

Wow, your cake looks amazing! But I have to say you lost me when I went off to google Kijaffa ….. I went off down memory lane, remembering a time when my parents used to buy Kirsberry liqueur, back in the 70’s I think! I’m sure your cake must be delicious! Thanks for the tutorial.

My gosh, that is quite a cake!! I love multiple layers and fruit fillings — I bet your husband loved it! Is the origin of the Kijaffa wine Danish, the same as the cake recipe? I followed the directions on the box, I think the first time it was 350 and turned out a bit dry, second time it was 325 and much better, still 50-60min though
it’s his favorite cake! he always wants more wine on it, but one time it was TOO much, I know the limit now 😉

The bakeries all make a Danish layer cake, and your version does them proud. I would just LOVE to make this.
